POSITION SUMMARY:

The Assistant, Cost Management is responsible for assisting the daily cost validation, providing direction and support to all restaurants, bars and snack bars/cafes in planning, purchasing and usage.  Monthly stocktake of inventories in the non-gaming sectors. Review of menu cost prices and recipe menu engineering analysis.  

PRIMARY RESPONSIBILITIES:

  • To assist the cost control of restaurants, spa, retail and non-gaming operations in daily tasks
  • Review the transactions in BirchStreet system on a daily, weekly, fortnightly and monthly basis that enables outlets to track the revenue and costs on a daily basis.  This includes reviewing the daily direct purchases, warehouse/ outlet transfers, and outlet cost transfers.
  • Review food and beverage recipes to ensure appropriate margins are maintained.
  • Assist the Manager & Supervisor with month end processes.
  • Run daily sales reports from Infrasys to ensure that inventories are depleted for beverage & tobacco items. 
  • Review daily cost transfers to ensure that reasonable quantity and type of transfers are done within kitchens/ outlets.
  • Trace to BirchStreet recipes to ensure that new menu item sales are attached to relevant recipes.
  • Do weekly spot check and monthly stocktake on warehouse & outlet inventory items to ensure that accurate inventories and cost of sales are maintained.
  • Ad hoc tasks as assigned by management.

QUALIFICATIONS:

Experience

  • Minimum 1 year post graduate experience in management accounting or analysis preferably in the F&B / hospitality sector
  •  Experience in the gaming industry or in large hotel environment with multiple F&B outlets preferred.

Education

  • Tertiary education in Finance / Business discipline.  Having post-graduate accounting knowledge preferred.

Skills / Competencies

  • Professional presentation and communication skills with the ability to build relationships at all levels within the organization
  • Very good computer skills, particularly Excel
  • Self starter, mature, confident
  • High level of motivation and discipline to achieve business objectives and common goals.
  • Conscientious and able to meet tight deadlines.
